My endo-friendly sugar-free tea treats.
Sweet things and I…we've had a complicated relationship. Ever since I was diagnosed with endometriosis, I had to completely transform the way I nourish my body. I avoid sugar, choose ingredients that don't fuel inflammation, and look for small rituals that feel comforting rather than triggering. That’s how these treats were born - my little festive treats I make instead of traditional holiday sweets, or simply when I want something gentle to enjoy with tea. They’re delicate, softly tangy from the hibiscus, naturally sweet thanks to the coconut, scented with vanilla… and completely sugar-free.
They are a reminder that even with food restrictions, nourishment can still feel beautiful, simple, and joyful - just in a different, more mindful way.

Ingredients
200 g shredded coconut
4 egg whites
1 tbsp dried powder hibiscus
5 drops of vanilla essence
pinch of salt
collagen powder (optional)
Method
Preheat the oven to 170 °C. In a bowl, mix coconut, hibiscus, vanilla, and salt. In a clean bowl, whip the egg whites into a firm, glossy foam. Gently fold the whipped egg whites into the coconut mixture until combined. Shape small balls and place them on a baking sheet. Bake for 15 minutes and let them cool completely.
I often like to add a spoonful of collagen into the mixture - it blends in effortlessly and give an extra nourishing touch. They’ve become one of my signature offerings during our afternoon tea gatherings, where everything is slow, tender, and intentionally crafted.
